  • 2 cups cooked chicken breast diced or shredded
  • 1/2 cup mayonnaise

  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1/2 cup celery finely chopped
  • 1/4 cup red onion finely chopped
  • 1/4 cup chopped fresh herbs such as parsley, dill, or tarragon
  • Salt and pepper to taste
  • Optional add-ins: 1/4 cup chopped walnuts or pecans 1/4 cup dried cranberries, 1/2 cup halved grapes

Instructions
 

Preparing the Chicken:

  1. If not already cooked, poach or roast the chicken breasts until fully cooked.
  2. Let them cool, then dice or shred the meat into bite-sized pieces.

Mixing the Dressing:

  1. In a large bowl, whisk together the mayonnaise, sour cream or Greek yogurt, Dijon mustard, and lemon juice until smooth and well combined.

Assembling the Salad:

  1. Add the diced chicken, celery, red onion, and fresh herbs to the bowl with the dressing. Toss everything together until the chicken is evenly coated with the dressing.
  2. Season the salad with salt and pepper to taste. If desired, fold in any optional add-ins such as chopped nuts, dried cranberries, or grapes for added texture and flavor.

Serving:
