Cheesy grits are a classic Southern dish that combines the creaminess of slow-cooked grits with the rich flavor of cheddar cheese. This version, inspired by former President Jimmy Carter's love for Southern cuisine, offers a hearty and comforting dish perfect for breakfast or as a side.
The addition of butter and milk ensures the grits are silky and smooth, while the cheddar cheese brings a sharp, flavorful edge.

  • 1 cup stone-ground grits
  • 4 cups water or chicken broth for extra flavor
  • 1 cup shredded sharp cheddar cheese
  • 1 tablespoon butter
  • 1/2 cup milk or heavy cream
  • Salt and pepper to taste
  • Optional: sour cream or chopped green onions for garnish

Instructions
 

  1. In a medium saucepan, bring 4 cups of water (or chicken broth) to a boil. Add a pinch of salt.
  2. Slowly stir in the grits, reducing the heat to low. Simmer, stirring frequently, for about 20 minutes until the grits are thickened and smooth.
  3. Stir in the butter, cheese, and milk (or heavy cream) until the cheese is fully melted and the grits are creamy. Season with salt and pepper to taste.
  4. Serve warm, topped with sour cream or chopped green onions if desired.
